Conocimiento, Uso Gastronómico y Percepción de Valor del Maíz Azul: Un Estudio Descriptivo
El maíz azul (Zea mays L.) es un insumo fundamental de la cultura gastronómica de Latinoamérica con un creciente interés debido a su perfil nutrimental, principalmente su alto contenido de antocianinas. El objetivo de este estudio descriptivo-correlacional fue evaluar el conocimiento del consumidor (N=84), su uso gastronómico y los factores socio-económicos que influyen en su percepción de valor. Los resultados revelan una brecha de conocimiento significativa: aunque el 89.28% de la muestra lo clasifica como "superalimento", solo el 54.76% identificó correctamente las antocianinas. Su consumo es de ocasión, con un 54.76% reportando un consumo "raro" o "nunca”. Económicamente, el 69% está dispuesto a pagar un sobreprecio, lo que demuestra un alto valor percibido. Este hallazgo, analizado junto a la brecha de conocimiento detectada, sugiere que el valor económico es impulsado no solo por la tradición, sino por la percepción de beneficios para la salud. Por lo tanto, el conocimiento técnico (y no solo el cultural) es un impulsor clave del valor. Esto presenta una oportunidad estratégica de marketing para posicionar el maíz azul como un alimento funcional premium, justificando su precio a través de la educación al consumidor sobre sus propiedades nutracéuticas.

High-intensity ultrasound-assisted extraction was used to extract total soluble phenols, flavonoids, and anthocyanins from Beta vulgaris stems, and to evaluate their antioxidant activities (DPPH, ABTS, and FRAP). The effect of extraction time (X1: 2, 4, and 6 min), ultrasound power (X2: 80%, 90% and 100%), and liquid-to-solid ratio (X3: 10:1, 15:1, and 20:1 mL/g) was investigated using response surface methodology. The high-intensity ultrasound-assisted extraction models for all responses were adjusted to a 2nd-order polynomial equation (R2 = 0.94 - 0.99, lack of fit > 0.05). Optimal high-intensity ultrasound-assisted extraction conditions differ for each response, X1: 3.08 min, X2: 100%, and X3: 17.32:1 mL/g for total soluble phenols, X1: 5.99 min, X2: 95.04% and X3: 17.28:1 mL/g for total flavonoids, and X1: 6 min, X2: 92.24%, and X3: 12.97:1 mL/g for total anthocyanins. Moreover, all evaluated conditions exhibited antioxidant properties by DPPH, ABTS, and FRAP. Furthermore, the validated high-intensity ultrasound-assisted extraction conditions (3.08 min for extraction time, 100% power ultrasound, and 17.32 mL/g of liquid-to-solid ratio) yielded 2.35 times higher soluble phenols content than conventional extraction method (magnetic stirring at 400 rpm for 60 min), with higher (p ˂ 0.05) flavonoids, ABTS, and FRAP values, and similar values (p > 0.05) for anthocyanins and DPPH. Furthermore, shikimic, protocatechuic, 4-hydroxybenzoic, gallic, chlorogenic, neochlorogenic, and trans-ferulic acids were higher under high-intensity ultrasound-assisted extraction than conventional extraction according to the HPLC analysis. It demonstrated that high-intensity ultrasound-assisted extraction is an efficacious technology for extracting bioactive molecules. In addition, future research could focus on isolating and purifying the phenolic compounds extracted from B. vulgaris stem powder, which have potential applications in food and non-food industries. En este trabajo se evalúa el rendimiento de una estufa eficiente de biomasa (IBS) tipo plancha utilizando un modelo de combustión de 6 reacciones para comparar los resultados numéricos con mediciones experimentales de la IBS modelo Tuya. La estufa de biomasa se evaluó mediante una prueba con tres repeticiones (Pruebas 1, 2 y 3) de 40 min cada una, 10 minutos de estabilización y 30 minutos de funcionamiento de la estufa. Se utilizó el software ANSYS Fluent para simular los principales fenómenos de transporte de la estufa de biomasa. En las simulaciones numéricas fueron configurados dos escenarios: TY_6R_L2 y TY_6R_L3 utilizando un coeficiente de exceso de aire (λ) igual a 2 y 3, respectivamente, en las 3 pruebas de rendimiento. En general, los resultados de la comparación de los casos numéricos muestran que λ tiene un efecto significativo en la mejora tanto de la transferencia de calor como del proceso de combustión de la IBS Tuya. En el caso de las emisiones de CO2e se obtuvieron diferencias del 35 y 19% para los casos numéricos TY_6R_L2 y TY_6R_L3, respectivamente, comparados con el valor experimental de 0.68 ± 0.13 kgCO2e/kg.

Stenocereus fruits are appreciated for their flavor and color, and their cultivation is highly sustainable, as they grow in arid zones without the need for fertilizers or agrochemicals. However, their nutritional and bioactive composition remains underexplored. This study evaluated the physicochemical and nutritional properties, bioactive compound content, and antioxidant capacity (AOX) of Stenocereus thurberi (red, white, purple, and orange), Stenocereus martinezzi (red), and Stenocereus gummosus (red). All fruits exhibited low total soluble solids (12.6 ± 0.2–14.7 ± 0.3 °Brix), acidity (0.81 ± 0.03–1.12 ± 0.03%), and moderate dietary fiber content (3.71 ± 0.05–4.86 ± 0.09%). S. martinezzi stood out for its high levels of betalains (33.7 ± 0.65 mg/100 g_fw), vitamin E (84.7 ± 0.2 µg/100 g_fw), and vitamin C (147.6 ± 11.4 mg/100 g_fw). At the same time, potassium, magnesium, and calcium were the predominant minerals in all samples. S. gummosus showed the highest total soluble phenols (120.6 ± 2.2 mg/100 g_fw) and was also notable for its flavonoid content. Flavonoids, hydroxycinnamic, and hydroxybenzoic acids were detected in all fruits. Red fruits had the highest AOX levels, followed by white, orange, and purple varieties. In conclusion, these fruits are nutritious, low in sugars, and rich in bioactive compounds, suggesting their potential as functional foods, particularly beneficial for individuals with chronic degenerative diseases.

Espacialidades de ocio, recreación y entretenimiento en el Tepic decimonónico
En las primeras décadas del siglo XIX, y posterior a la Independencia, la ciudad de Tepic manifestará un inusitado aumento y heterogeneidad en la oferta de espacios destinados al ocio. Dichas espacialidades, no solo (re)construirían la imagen y el paisaje de esta ciudad poscolonial, sino también la identidad, cotidianidad y urbanidad de los tepiqueños, quienes nunca más serían los mismos. Este texto tiene como objetivo advertir las permanencias y transformaciones de este tipo de espacialidades dentro de la estructura urbana del Tepic decimonónico. Para ello, desde una postura hermenéutica, se recurrirá al método histórico para la interpretación de diferentes fuentes de información disponibles, como diarios de viajeros y periódicos de la época, lo que incluye la producción historiográfica local, regional y nacional. En este sentido, se define que el establecimiento de los espacios de ocio y recreación en las ciudades poscoloniales obedecería principalmente a cuatro distinciones. El emergente tiempo libre de su sociedad, el arraigado conjunto de actividades originarias de la Nueva España, el consentimiento de novedosas prácticas impuestas desde la modernidad europea y, sobre todo, el compromiso de una oligarquía local que aspiraba tener el mismo tipo de entretenimiento que otras ciudades capitales.

This study evaluated the combination of thermovacuum (TV = 33 kPa of vacuum pressure, 5 min with three pulses of vacuum pressure, 65 °C) and thermosonication (TS = 80% amplitude, 10 min with 0.5 s pulse-cycle, 65 °C) treatment (TVTS) in an Annona muricata beverage stored at 4 °C, measuring the inactivation of polyphenol oxidase (PPO), spoilage microorganisms, and quality parameters. TVTS treatment was compared with a control and pasteurized beverages. The TVTS beverage exhibited a PPO inactivation >99% and had no spoilage microorganisms after 30 days of refrigeration, whereas the pasteurized beverage exhibited 8.27% PPO activity and had a shelf life of 20 days. The quality parameters and bioactive compounds (phenolic compounds, alkaloids, acetogenins, and ascorbic acid) were more conserved in the TVTS beverage than in control and pasteurized beverages during storage. The TVTS process could be a viable alternative to preserve the quality attributes, bioactive compounds, and microbiological stability of beverages.
