淡口醤油パラドックスともいえる淡口醤油の調理特性をあきらかにするため，淡口醤油と濃口醤油での「塩味」「かつおだし風味」「煮干だし風味」「昆布だし風味」の閾値を2点識別試験片側検定にて比較した．さらに，醤油とかつおだしを組み合わせた時の減塩効果についてプロビット解析により検討を行い，以下の知見を得た．（1） 「塩味」の閾値は喫食時を想定して設定した3種類（0.92％，1.28％，2.75％）すべての食塩濃度範囲で濃口醤油より淡口醤油の方が低いことが明らかとなった．（2） 「かつおだし風味」「昆布だし風味」の閾値は，食塩水，濃口醤油よりも淡口醤油が低い結果となった．（3） 「煮干だし風味」の閾値は，醤油使用量が多い5.6％濃口が最も低い結果となった．5％淡口醤油，5％濃口醤油の閾値に差は見られなかった．（4） 0.90％食塩水と同等の塩味の強さと感じる等価食塩濃度は2％，3％，6％のかつおだし溶液それぞれ0.903％，0.894％，0.843％となり，だし濃度が高くなるほど塩味を強く感じる傾向を示したが，95％の信頼限界域から判断して，濃厚な6％かつおだしにのみ減塩効果が認められ，通常のだし濃度3％以下では減塩効果はなかった．（5） 4％淡口醤油，4％濃口醤油そのものには減塩効果はなかった．（6） 3％かつおだしと4％醤油を併用した場合の0.90％食塩水との等価食塩濃度は，淡口醤油の場合0.872％，濃口醤油の場合0.891％と共に減塩の傾向を示したが，95％信頼限界域から判断して淡口醤油の場合のみ有意な減塩効果が認められた．以上より，調理に淡口醤油を使うことは，目的とする塩味に調節し易く，且つ，だし風味を効かせた低塩料理につながることが強く示唆される結果となった．

In this study, a “Revised Empathy Scale” was constructed by using an empathy scale from the previous study (Hashimoto & Shiomi, 2000). A questionnaire consisting of 30 items on empathy and the Shimoda Personality Inventory (SPI) were administered to a total of 870 subjects (466 university and 404 high school students). Through factor analyses, four factors were extracted for the empathy scale. The four factors were named the “Cannot feel others' positive feelings,” the “Can feel others’ positive feelings,” the “Can feel others' negative feelings,” and the “Cannot feel others' negative feelings,” respectively. Their reliability and validity were confirmed. The characteristics of empathy in adolescents were clarified by the scale's relationship with the characteristics of the SPI.
